Warning! Do not lick your Food Processor Blade! Raw Ice Cream

Now I was always the one who scooped out the ice cream...You know with the metal scoop...and when finished the first thing I would is give the scoop a lick.  Ouch not to smart right.  So then I tried short licks...and well I always got that ice cream off!  Now please when you make your raw ice cream I beg you not to lick the food processor blade....Even though it looks so tasty...and I know you hate to waste that little bit....But really it is not worth cutting your tongue for.  I tell you it was so hard for me not to lick the blade  :)


I have seen recipes for raw ice cream before, and I have been wanting to make my own...so I have been looking for an affordable ice cream maker.  Yesterday I saw this Happy Herbivore recipe here.  And I was like..."hey I can do that!"  And I had everything I needed!  So today I made raw ice cream!  This what I did!


Raw Ice Cream for one!


1 frozen Banana
1/4 cup Almond Milk 
1 Dried Fig (that I soaked the day before)
1/4 tsp Organic Cocoa


Throw all in your food processor(blender may work as well) And whirl until it looks like soft serve ice cream!
Enjoy your ice cream right away!  (this bowl started melting on me cause I was running all over the house trying to find the card for the camera!!!)


I think this recipe would do amazing with home made coconut milk...and I am going to have fun making different flavours this summer!

Chunky Apple & Banana Oatmeal Muffins

Another sweetened apple sauce recipe. If you read yesterdays post you would learn that I bought this apple sauce by mistake.  You may want to add a little sweetener(honey?) if you make this recipe if using regular apple sauce.  I made these for my daughter feild trip but forgot to snap a pic before I sent them away. So no pic as they were such a great hit none were brought back home from my daughters group. 

Chunky Apple & Banana Oatmeal Muffins

  • 1 1/4 cups whole wheat flour
  • 1 1/4 cups oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 cup applesauce
  • 1/2 cup milk
  • 1 large egg, lightly beaten
  • 1 lg banana diced
  • 2 apples diced
Preheat oven to 350 degrees.
Grease a 12 cup muffin tin.
In a large bowl combine flour, oats, baking powder, baking soda, salt and cinnamon.
In a medium bowl combine applesauce, milk, and egg.
Make a well in dry ingredients and add applesauce mixture.
Stir until just moist. Fold in bananas and apples.
Fill muffin cups 2/3 full.
Bake for 30 minutes.

Spinach Smoothie

I have a confession.  I have never had a smoothie with spinach till today.  I am not sure why I have never tried it, maybe I just didn't have any at the time I was making smoothies?  But today I was in the fridge pulling out fruit and yogurt ingredients for my smoothie and saw the spinach.  So I decided to give it a whirl!  I was surprised, you don't even taste the spinach in there!  It was so yummy too!
I make smoothies all the time, and you know me, I just throw in what I have around.  

Today's smoothie recipe
  • half a mango
  • handful of blue berries
  • big handful of baby spinach
  • half cup yogurt
  • half a banana
  • about 6 ice cubes
Throw all in a blender, and whirl till smooth!  Enjoy!

Banana Crackers! Yummy!



Hi all!  Today I am sharing a fun recipe you can make with the kids this summer.  Perfect for those summer rainy days!  Kids will just love playing with real dough, and then baking it up into a tasty snack!
 
Banana Crackers

  •   2 cups  Whole Wheat Flour

  •   1/4 tsp Salt

  •   1/8 tsp Baking Soda

  •   6 tbls Apple Sauce

  •   2/3 cup  Mashed Banana (1 large)

  •   2 tbls Honey

  •   2 tbls Warm Water


Preheat oven to 350 degrees F.
 
Combine the flour, salt, and baking soda in a large bowl; stir in the apple sauce until the mixture resembles coarse meal. Add the banana and blend well.

In a separate bowl, dissolve the honey in the warm water.

Slowly add the honey/water to the flour/banana mixture and blend to form a dough that will hold together in a ball.
 
Divide the dough into 2 equal portions and roll the dough thinly.

Cut out squares or shapes using a cookie cutter.

Arrange crackers on a lightly greased cookie sheet.  Or use your silicone mat.
 
Prick each cracker in 2 or 3 places with the tines of a fork.

Bake for 15 to 20 minutes, turning over once during baking. These crackers should be medium brown.  Cool on a rack.

Strawberry Banana Coconut Milkshake (with an optional kick!)

Mmmmm...These are so yummy!  Another summer drink for you to try this season.  A cool "healthy" treat of strawberries, banana, and coconut with a touch of Baileys is the perfect companion to hot summer evenings, don't you think?!  This cool shake is way better than anything you could pick up at a fast-food/coffee shop window!!   It tastes a bit like a banana split.  You really need to give this recipe a try!   You will not be disappointed!

Strawberry Banana Coconut Milkshake (with an optional kick!)
  • Strawberries, washed and hulled.
  • Banana, frozen if you have one, fresh if you don't.
  • Coconut milk about a cup  (if using canned-half a can coconut milk w/half can water)
  • 4 oz Baileys (optional, also can substitute with rum) 
Blend all ingredients and enjoy!
Also can be made ahead of time and put in freezer(but not to long as you don't want it to be totally frozen) whirl in the blender again for a colder treat!

Banana Curry Soup

This is another very easy and simple recipe that my kids love!  Just don't tell my daughter there is onion in it.  And 2 of the men who tried it couldn't figure out what the main ingredient was!  Tastes a lot like squash!
 

Ingredients:
4
Bananas ,sliced 
2 Garlic cloves, chopped
3 cups Vegetable stock
1 large
Onion, chopped  
1.5 tsp Curry Powder

Directions:

1. Mix curry powder and vegetable stock in a pot.
2. Add onion, bananas and garlic to the pot.
3. Bring it to boil and then simmer for an hour stirring occasionally.
4. Put it all into a blender and mix until smooth.
5. Serve
with naan bread and enjoy!
