Lets have a SALAD Party!

I have been experimenting with making my own homemade salad dressings.   I loved this dressing with the leftover turkey that I put on my garden salad.  I am sure it would taste good with chicken too.  I just wish I had some spinach!  But as always I use what I have!

Homemade Salad Dressing!  


  • 1/4 cup POM Wonderful juice
  • 1 teaspoon lemon juice
  • 1/2 teaspoon sugar
  • 2 tablespoons mayonnaise
  • 1 teaspoon extra-virgin olive oil
  • 1/2 teaspoon dijon grainy mustard

Combine all ingredients in a small jar,  shake till mixed! Drizzle over salad!

Carrot Ribbon Salad

What do you do if you run out of lettuce and feel like a salad?  Peel carrots into some yummy carrot ribbons!
I just had to share my lunch with you today!  A super easy and quick salad you can whip up for one with the ingredients you have on hand!

2 carrots, peeled into ribbons.
Toppings, I used a no salt, nut, seed, fruit mix.
(have some fun with this and add what you like and let me know!)
Dressing, I used very little of a poppy seed dressing.

Put it all into your fave bowl and enjoy!

For some reason I just love carrot ribbons!  I think they taste way better then chopped carrots! I often put carrot ribbons on top of garden salads to fancy them up!

Strawberry Spinach Salad with Honey Dijon Salad Dressing

A very yummy lunch I had today!  A folded flat bread sandwich with chicken, cheese, red peppers, mushrooms, green onion, with a little chipotle sauce to spice it up!

Today's salad was what I had on hand...I really need to go shopping!   You could add so much more to this salad!  You could add nuts, sprouts, any veggie you like!  Today I had...

Strawberry Spinach Salad

Fresh organic baby spinach, with strawberries sliced on top,  and some toasted sesame seeds!

Honey Dijon Salad Dressing
Honey
Dijon grainy mustard
white wine vinegar

Measure equal parts honey and mustard and add vinegar till the right consistency!
Very yummy!

Brocoli Salad

 Broccoli - The miracle food!

Another family favorite recipe my kids love!

 Ingredients
  • 1 - 2 bunches of broccoli, cut into bite size pieces
  • 1/4 cup red onion, chopped (optional if your kids don't like onion)
  • 1/2 cup raisins
  • 3 tablespoons white wine vinegar
  • A pinch or drop of stevia (or 1 tablespoon white sugar)
  • 1/2 cup mayonnaise
  • 1/2 cup sunflower seeds

Instructions

  1. In a medium bowl, combine the broccoli, onion and raisins. 
  2. In a small bowl, whisk together the vinegar, stevia and mayonnaise. 
  3. Pour over broccoli mixture, and toss until well mixed. 
  4. Refrigerate for at least two hours.
  5. Before serving, toss salad with sunflower seeds.
Enjoy!

    Spinach Chopped Green Salad

     So I have been following Jamie Oliver too!  The first thing I did was go to the library and request all his cookbooks.  This is a chop salad I made out of one of them...can't remember which one...This recipe is a little bit modified to go with  what I had on hand! 

    Ingredients

    Salad
    Cucumber
    Avocado
    Cilantro (fresh just leaves no stems)
    Green onion
    Alfalfa sprouts
    Baby spinach

    Dressing
    Olive oil
    Red wine vinegar
    Dijon mustard
    Fresh ground pepper

    Chop all salad ingredients, add half to bowl, make a well in the middle of salad bowl and add olive oil, red wine vinegar, dijon mustard, and a little fresh ground pepper.  Toss salad, and add rest of ingredients.  Enjoy!


    Cilantro is a good source of folic acid, and also helps detox heavy metals out of your system including mercury, lead and cadmium.
    Spinach also a good source of folic acid, calcium, and whole list of nutrients!
